Date Squares

A homemade date square is a great post workout snack – you’ve “earned your carbs.” Do not add sugar to the date-filling mixture. Instead, take the time to cook slowly. This releases the natural sugar from the dates. Be sure to use the large, chunky oatmeal flakes to give a beautiful appearance to the date squares. Serve small, bite-sized squares at a tea party, larger squares for a weekend brunch. Here’s my recipe; it contains less sugar than most recipes.

1-1/2 pound pitted dates
1-1/2 c hot water
2 c oatmeal
2 c flour
1 c brown sugar
½ tsp baking soda
½ tsp salt
¾ c butter

Add the hot water to the dates in a pan and cook over low medium heat until the dates are soft and cooked and natural sugars released. Gently mix all of the other ingredients in a large bowl. Put half of the mixture into a baking dish, approximately 9″ x 11″. Add the date filling and spread evenly over the oatmeal mixture. Then add the remainder of the oatmeal mixture and press evenly and gently. Bake at 350 degrees F for about a half hour until the top is golden brown.
